Rename a SharePoint Server 2007

In order to rename a computer after an installation of SharePoint Server 2007 and SQL Server 2008 R2, you can:

Rename a Computer: My Computer > Properties > Computer name > Change settings > Computer name > [Change]
Central Admin > Operations > Global configuration > Alternative access mappings > [Click on the URLs]
stsadmin -o renameserver -newservername <NewName> -oldservername <OldName>

Good advice. If you use local users for the service accounts, you additionally have to update the farm credentials and rebuild the search index (if you have one).
